One of my favorite diet tricks is Rotel Chicken. Put three pounds chicken breasts in crockpot with one giant can of Rotel and an envelope of taco seasoning and cook on high 4-6 hours. Shred. Tonight I put some in corn tortillas and covered in salsa, a little red enchilada sauce and lots of lettuce and tomato. Yum.
Other uses are green chicken enchiladas, BBQ chicken pizza, black bean taco pizza, taco salad, burrito bowls with rice and beans, spicy pasta with corn and beans, and nachos with homemade chips.
